Lasagna...with Mexican Cheese
And the receipts continue. Today, Lasagna. With Mexican cheese. Yeah, I didn’t have any Mozzarella. It was good though. Now I have a better understanding of how to make it so next time is going to off the charts.
Today was a day off so I ended up eating almost half the pan of lasagna. I forced myself to stop so we could have some leftovers for lunch tomorrow. Lasagna is always better day two, always. I’m excited about that.
Billy Yang started the David Goggins, 4x4x48 challenge tonight. If you don’t know either of those guys, look them up. Billy is an amazing film maker and runner. David is just an all around badass. Navy Seal, ultra runner, there is more….look him up. He’s done a couple of podcasts with Joe Rogan. Billy’s films can be found on YouTube. Anyway, I wish I would have done it with him. He got all the runners on a Zoom call before they started and guess who showed up on the call….Goggins!!!
I will probably end up doing it on my own in the next month or so. It sounds like a really fun and a tough challenge. You run 4 miles every 4 hours for 48 hours straight. At the end you have run 48 miles in two days. The mileage isn’t too crazy. Don’t get me wrong, its like doing my entire week in two days but I don’t think I would have a problem with the miles. I think the hard part will be the lack of sleep and the constant start and stop of the challenge. Getting up in the middle of the night go run 4 miles sounds kinda exciting but not after I’ve run 36 miles in the last day plus.
I would love that mental and physical challenge though. I have to do it. If anyone is reading this, hold me accountable. Remind me. I’m going to recruit the Santa Cruz Mountain Goat to do it with me. We will do it before the summer ends. My mind is made up. Going to text him now. Bye.
